From My Family to Yours – Cheesy Potato Soup Recipe

As much as I keep wishing for spring….I keep getting winter!  Since it was so cold and snowy today, we had Cheesy Potato Soup for lunch – it’s perfect for warming you up from the inside out!  I thought I would share my recipe in case you’re like me and always looking for ideas on what to feed your family. It’s very versatile and you can easily customize it to your family’s liking!

Cut 3-5 medium potatoes cut into small cubes (your choice as to if you want to peel them first or not) and mince some onions (again, if you love onion, add as much as you want – I typically add about 1/8 cup).  Add the potatoes and onions into 3 cups of water and bring to a boil on the stove.  Keep at a full boil for 5 minutes.

Add 3 tablespoons of butter and 2 cups of milk and bring back to a boil.  Once at a full boil, boil for 3 minutes, stirring occasionally.  (I personally find it just as easy to use a large whisk.)

When the 3 minutes is up, drop the temperature to medium.  Add any seasoning you might like – this is where you can really customize!  I add 1 teaspoon of Chicken Bouillon Granules and then lots of pepper…but you can season it with anything your family might like.  (I shared this recipe with a friend’s family and they used Mrs. Dash and like it quite well – so really, anything goes!)

Add 2 tablespoons of flour and 1/3 cup of Parmesan cheese and stir.  This will make what is currently a rather juicy soup, thicken.  Add shredded cheddar at this point if you would like.  Continue to cook until you reach the desired consistency.  (We prefer it more creamy over juicy, so I tend to leave it on a bit longer.)

You can serve it up topped in shredded cheddar and bacon bits.  Add a grilled cheese sandwich or even a BLT and you’ve got a meal!
